Greek Salad
Fresh and plump organic tomatoes, crisp cucumber, salty feta marinated in herbs, sliced black and green olives all doused with olive oil, a squeeze of lemon juice, sprinkling of sea salt and finished off with fresh parlsey from the garden torn right on top...

Persimmon, Feta & Arugula Salad
i bought a couple of persimmons at the farmers market.
i happily (and greedily, truth be told) brought them home to be made into a simple yet awesome salad with organically home grown cherry tomatoes, sweet potato shoots and arugula... added some toasted almonds and slivers of feta cheese...drizzled with good balsamic vinegar, apple cider, light olive oil and sea salt...
then i sat on the edge of the terrace to bask under the sun, enjoy the view and lazily pick on my salad...
sweet, crisp and refreshing!

I added hundreds of songs to my playlist for 2011 (not necessarily released during the year) but these are the ones that stand out. My ears are thanking and bowing down to the music gods for these...
