i bought a couple of persimmons at the farmers market.
i happily (and greedily, truth be told) brought them home to be made into a simple yet awesome salad with organically home grown cherry tomatoes, sweet potato shoots and arugula... added some toasted almonds and slivers of feta cheese...drizzled with good balsamic vinegar, apple cider, light olive oil and sea salt...
then i sat on the edge of the terrace to bask under the sun, enjoy the view and lazily pick on my salad...
sweet, crisp and refreshing!
oh, happy days...
