Salmon, Mango and Walnut Salad with Passionfruit Vinaigrette

home-cured salmon, toasted walnuts, slivers of Parmesan, green olives, mandarin and mangoes on a bed of fresh greens from the garden, freckled with passionfruit pulp and a drizzle of olive oil
